Barbecue/Cooking a rotisserie chicken using the side infrared burner

Question
I have a 4 burner gas grill with a infrared burner in the back, up on the side. I
want to cook a rotisserie chicken, 4lbs.  I was thinking of cooking on high for 20
minutes then turn it down for another hour. Any tips? This is my first time using
a rotisserie and side infrared burner combo.

Answer
Kevin,

I would do the opposite.  Start it at 325-350, when it reaches about 160 degrees in the breast, then for 10-15 minutes finish it 425.  This will give you a nice crisp skin and a juicy chicken.  Don't put on any rub or sauce that contains sugar as it will cause the skin to burn. If you want, put a sauce or a rub on with sugar for the last 10-15 minutes.  It will give you a nice color.
