Hi Misty,

Thanks for the quick response to my question on cooking steamships/hind Qtr's (08-04-08).  My next question is; what do you recommend for a mop mixture that does not use sugar?  This beef thing is all new to me so I appreciate the advice.

Hi Mark,
Here are a couple for ideas but you can modify them to your own personal tastes and probably double up the recipe for the amount of beef you are cooking.

1 bottle of Scottish ale (or beef if you prefer)
1/2 Cider vinegar (or sometimes I prefer red wine vinegar)
1/3 Cup of water
1/3 cup of canola oil
1 small onion diced
3 cloves of garlic minced
1 tsp. pepper
1 tsp. salt
1 tsp. cayenne pepper
mix if all together and cook until dissolved.
An easy way to mop beef on a spit is to put it in a decent spray bottle and just spray it on.

or there is this variation
1 cup beer (or ale)
2/3 cup Worcestershire sauce
1/3 cup vegetable oil
1 1/2 teaspoon salt
1 1/2 teaspoon paprika
1 1/2 teaspoon dry mustard
1 1/2 teaspoon black pepper
1 1/2 teaspoon cayenne
1 teaspoon Tabasco
1 teaspoon garlic powder
mix together and allow to sit in the refrigerator for about an hour before using so the seasonings blend.

The reason I like to use ale is because its a great tenderizer and establishments like outback steakhouse use it to marinate their steaks.

Don't forget to serve some horseradish and au jus on the side. You definitely are going to have a great party.
