Question
I have a rather large ss grill and I am wanting to cook 2 maybe 3 8lb butts on it this weekend. How is the best way to slow cook these and for how long

Hi Greg,
The best way to cook Boston butt on the grill is with indirect heat. If its coal place the coal off to the sides and put the roasts in the center with a dish of water or apple juice etc underneath the roasts. The rule is 1 hour per pound indirect heat but since you are using three 8 pound roasts I would say it should take between 8 to 9 hours to cook them.

If its a gas grill light the side burners on both the left and the right and keep the roasts in the center with a drip pan with water or apple juice underneath the roasts. With either fuel you need to keep the temperature at 225 degrees for 8 to 9 hours.

As far as recipes for flavors are concerned its a matter of personal preference. Some people marinade their roasts overnight. Others use flavor injectors. Some people dry rub and then wet mop throughout the cooking process.
