Help I need a good Vinegar BBQ Sauce for a whole hog.  But not to hot, have kids and older people coming by to eat.....

Hi Karen,
I tend to not measure my ingredients so I went out looking on the web for a recipe that I have used only with measurements and found this website:

Since you mention that you prefer it not as spicy I would add substantially less of the red and black pepper until you cook and taste it a bit. That way you can keep adding until you get the desired amount of kick.

For my own recipe I don't use white wine I tend to use red. Not for any other reason other than I have an opened bottle that needs to be used up.

The amount will depend on how you are going to use this recipe as well as the size of the pig. Generally vinegar aka Caroline BBQ sauce tend to be used with the cooking process as a wet mop as well as some left in bottles to be used by consumers to taste. I tend to double the recipe and overkill with 16 quarts because I love to really slather the pig in the sauce throughout the cooking process and don't have to worry about being short sauce wise at serving time.
