Barbecue/boston butts on the smoker

Question
I normally smoke an 8lb Boston Butt in an R2D2 electric smoker fat side up.  I smoke for about 4 hours and put in the oven @ 250 for another 9-11 hours covered in foil.  Tomorrow i want to smoke 2 8lb butts.  Should my cooking times be the same?  or longer?

Any other recommendations (rubs, injections, woods, etc) are truly appreciated.  Kinda new at this.

Thanks

Answer
Hi Dusty,
I would love to see a picture of your grill! I bet it looks cool. I think you know what you are doing. Just make sure there is space in your grill for both roasts so that the smoke can move around and permeate each of them. Smoking them together for 4 hours should work to give it a smokey flavor. The cooking time for the oven portion depends allot on the amount of space your oven has and if it has a convection feature on it or not. For a regular oven the same rule applies to make sure to space the roasts apart and I personally would just keep checking it as you probably have been doing at the 9 hour mark and continue to check it until its done. Two 8 pound roasts slow cooked in a conventional oven should take between 9 to 11 hours. Convection ovens will get the meat done faster.

Any of your favorite rubs would be fine. Lately I have been smoking with apple wood and keeping a pan of apple juice in my grill to help season the meat and keep it moist. Then at serving I have several bottles of different types of sauces for people to use. If you live in a southern state and can get ahold of some pecan wood that is a good smoke for pork.

If you have any more questions please feel free to ask.

Regards and happy smoking!
Misty
