Barbecue - Grilling with a oxygen-rich hydrogen flame -- good idea or not?

Expert: BBQ Woman - 3/19/2009

Question
Hi:

Is it practical to grill pork spare ribs using a hydrogen flame BBQ in which for every 1 molecule of hydrogen, there are 10 molecules of oxygen? The resulting flame is characterized as "oxidizing" or "lean" on a ratio of 10:1.

Thanks,

Green

Answer
Hydrogen grills are popping up on the market. I have never used one but understand how they work. The commercial vendors claim that since hydrogen when burned creates steam grilling would be much better as the meat would remain moist.  It makes sense on paper but I have yet to see it in practice.

Practical depends on the opinion or viewpoint. I guess if you have the money to buy a hydrogen grill and want to use it so be it. I personally prefer lump charcoal cooking as I love the flavors I get when cooking in this method. Is it practical for me is a yes no answer. Yes because I already own a grill that uses charcoal and no because it is time consuming. Yet its my love and passion.

If you do obtain a hydrogen grill let me know your results as I would love to find out if the theory of moist meat applies.

Regards,
Misty
