Question
Can a BBQ be too hot?  What is the regular desired temperature for cooking things like chicken breast or leg?  What is the desired temperature for cooking things like steak or pork?

Answer
Yes.  You wouldn't want to cook above 450 degrees f.  To get a crust you can cook at that temp.  I prefer about 350 as it is easier to control.  I also cook things like chicken indirect that is off the fire.  Direct will be on top of the fire.  Steaks I will do direct.  Gets a nice crust on the ouside and rare on the inside.  If you are cooking something like chicken or pork (or steak that you want well done-yuck), cook it indirect so you don't burn it.
