Question I have cut down a mesquiet tree. It has dried out for over a year, Is there anything I must do to it before using it for smoking? And how much do I use? I tried it last night it smelled like a old barn on fire, WHY? Thanks, Tim

Was the tree cut into pieces or did it just lay whole for a year? It should take about 6 months to dry out when in pieces. Mesquite is a very strong wood. I don't like to use alot of it and it can be very harsh especially depending on what you smoke with it. It goes well with brisket but I wouldn't try it with other foods. I am just not a mesquite person. For brisket, I would use a couple of pieces about 2 inch diameter and 6-10 inches long along with hardwood charcoal or briquettes.
