Question
I have a large charcoal grill which is really manuafactured like a 55 glaolon drum cut in half. I want to cook a steam ship roast on it this weekend. I usually roast whole pigs on this type grill. My question is do I roast it the same way as I do the pigs? I usually just put about 60 pounds of charcoal in the bottom, light it, put the drip pan over the coals so the drippings don't catch fire, close the lid and let it go for 8-9 hours. Thanks for you help

You are correct to have drip pan directly below meat to catch drippings with coals on side. You will have to turn the roast on occasion and keep checking the temperature. 140 degrees remove and let set.
