Question
I just received a new gas grill - have had several. We used this one yesterday for the first time with boneless ribeye steaks - it kept flaming up again and again - are we doing something wrong or is that expected.

It's a sears kenmore - with three burners - thanks for any information you can help us with.

I can't help you if the problem has to do with properly adjusting the gas -- I grill exclusively with charcoal and wood.  But on a charcoal grill, I'd make sure that the steaks had most of the fat trimmed off and I would limit the airflow to the coals to cool them down a bit.  Some folks keep a water mist sprayer close at hand when grilling to control flare-ups.  One important question: are you using a covered grill?  If so, just keep the lid closed and only open it to flip the steaks -- that will do a lot toward limiting flare-ups.

I can answer questions having to do with grilling or barbecuing meat (but not pork), poultry, fish, and vegetables over charcoal or wood. I also have some expertise in marinades and spice mixes. I cook only with charcoal and wood, so please do not ask me any questions about gas or electric grills.

Experience

I've been cooking with fire and smoke for 25 years, using charcoal and wood almost exclusively. While I do not usually cook with gas, I'm willing to try to answer cooking questions in this area. I cook meat, poultry, fish, and vegetables, and I've experimented with a lot of different recipes and techniques. I am not able to answer questions about grilling or barbecuing pork. Most recently I've been using slow-cooking (indirect heat) techniques, and have been very successful at it.
