Question
I'm cooking 2-8pound Boston Butts on an electric smoker (on two different racks) How long would say this will take?
I have applied the rub and will inject prior to marinade. I plan to cook them to 85% then put them in the fridge and finish them before the party tomorrow.

It generally will take one to one and a half hours per pound of meat. Use a meat thermometer to verify doneness of 180 degrees. Then you can remove it and refrigerate it and reheat it when you are ready to serve. Unless you are doing pulled pork and then I would cook it to 190 degrees.
Then you can refrigerate it and all you need to do is heat it up before you serve it.

With the electric smoker from my own personal experience using them the meat tends to get done at an hour per pound.

Electric smoker tips
Soak your wood chips for at least a half hour.
Get your smoker up to temperature before adding the meat and wood chips.
Cook the meat fat side up.
Cover and pretty much forget it you don't need allot of smoke to make a great meat but you can add more later on if you don't see allot of smoke.
Some people don't use water in the water pan but use things like apple juice and garlic cloves to add even more flavor to the roast.
