Questionneed any information on cooking southern bbq hash. had it in south carolina was served over rice very good.

Pork hash varies from region to region but in South Carolina pork hash is usually the head meat (brains removed) and the liver. Its boiled until tender. Then its ground up keeping in mind to save some of the liquid it was boiled in for stock for the next step.
When ready to make the hash some of the stock is added to the meat and other items such as diced onions and peppers are added as well as the persons favorite bbq sauce. Simmer it slowly and then serve over cooked rice.
There are other variations of southern hash that don't use the head and liver. The key elements tend to be leftover pork and bbq sauce and the rice.
