Here are some I refer to often;
Grilled Swordfish Steaks
Marinade:
1/2 cup soy sauce - the sweet kind works well also
1/2 cup orange juice
1 Tbsp dried parsley flakes
1 tsp. dried oregano
4 Tbsp ketsup or tomato sauce
1 large garlic clove smashed
juice from one fresh small lemon
salt and pepper as desired
4 small to medium swordfish or tuna steaks
Combine marinade and place in ziploc plastic bag. Add fish, seal and
refrigerate overnight, occasionally turning bag to distribute marinade. Drain
marinade and grill fish on a rack, about 4 to 5 minutes on each side over hot
coals or briquettes ( center will be a little pink ) or as desired. Overcooking
causes a dry fish.

Swordfish
four 8 oz. swordfish steaks
1/2 cup teryaki sauce
2 T margarine, melted
1 tsp. garlic powder
Directions:
Swordfish
Marinate fish 5 minutes per side in teryaki sauce. Spray grill with a non-stick coating. Grill fish over medium coals 5-6 minutes per side, basting frequently with melted margarine. Season with garlic powder. Check fish for flakiness when done.

GRILLED SWORDFISH WITH CORIANDER LIME BUTTER
For Grilled Swordfish
1 1/2 tablespoons unsalted butter, softened
1 teaspoon freshly grated lime zest
1 tablespoon fresh lime juice
1 small garlic clove, minced
1 tablespoon minced fresh coriander leaves
two 6- to 8-ounce swordfish steaks
Grilled Swordfish:
Prepare grill. Medium heat.
In a small bowl together butter, zest, 1 teaspoon lime juice, garlic, coriander, and salt and pepper to taste.
Rub both sides of swordfish steaks with remaining 2 teaspoons lime juice and season with salt and pepper. Grill swordfish on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, 3 to 4 minutes on each side. (Alternatively, swordfish may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
Top each swordfish steak with a dollop of coriander lime butter and serve with grilled onions.

Ginger-Soy Grilled Swordfish
Preheat 10 minutes on Phase II with louvers closed
6 to 8 oz Swordfish steaks
1 tsp. fresh (minced) or granulated garlic
2tbls vegetable oil
2tbls soy sauce
2 tsp. sherry
1 tbls sugar
1 tsp. powdered ginger
Combine all ingredients and marinate the swordfish steaks for two hours in the refrigerator.Grill for 6 minutes on each side.
Have fun...swordfish is excellent grilled..
be sure to use pam or something on the grill...it tends to stick
