QUESTION: gas  grill  sorry  i  didnt  say that  how  long  will  it  take  at  225  per  pound

Answer
It generally takes 1.5 hours per pound at a temperature of about 225 to cook to the proper temp. So if you have a 5 pound roast it would take 7.5 hours to cook. Some roasts will get done sooner some longer and the best gauge for doneness is using a meat thermometer. An internal temperature of about 180 is good for slicing and about 190-200 range for pulled pork.
If you want a more smokey flavor during your cooking process you can put soaked woodchips in some aluminum foil and poke holes in it although the results are not the same as using a traditional smoker.
Most also poke holes through the fatty side of the roast and marinate it over night. Dry rub is then applied the next day before cooking. Some people use a wet mop during the cooking process as well. Its all a matter of taste.
You can also have a pan of water in the grill with water and spices. Some people use apple juice in place of water. Part of this is to attempt to keep the roast moist. I personally prefer not to keep a water basin in my grill mostly because I like the outside to be crispy and I also feel a butt roast with its marbling of fat has no issues with dryness. I hope this helps you.

Misty
