AnswerHi Michael,
There is no real difference in performance and functionality between a natural gas vs a propane grill.
The only way I can explain the biggest difference is natural gas requires twice as much gas so the intake for natural gas is much wider than a propane unit. Yet depending on where you live natural gas tends to be much cheaper even when using more volume of it for cooking.
The other benefit is that you wont run out of gas until the gas company does.
The downside is you need to have a gas line run to your cooking station and you will need to purchase a grill made specifically for natural gas. There are conversion kits to convert propane grills but I really don't know much about them.
The downside to propane is you have to always exchange tanks/get them filled and unless you have a back up handy there is always the rare chance you will run out of propane in the middle of cooking.
They both work well as far as even cooking and clean up is similar.
So in reference to temperature they both can maintain the same temperature its just one uses more volume to do so.
I hope this helps you.

Misty
