QuestionHow can I serve boston butt in my tea room other than dinner plates and BBQ? if not BBQ what kind of sauce would go weel for wraps? Thanks,
AnswerIts all a matter of personal preference and taste. If you cook Boston butt to an internal temp of between 180 and 190 and let it stand for about a half hour you can slice it into thin slices. Cooking it longer makes it ideal for pulled pork. Both ways would go good with wraps. When it comes to seasoning just be creative. Some people like to add a Cajun flair by adding Cajun spices during and after the cooking process. I was at a friends house this past summer where she served thin sliced Boston butt Thai style which basically she had cooked the roast in Thai spices and then wrapped them in fresh spring roll wrappers with lettuce, Thai noodles, cilantro and served a peanut dipping sauce with them. It was a big hit. I think it would be just as good with regular wraps as well. Find a sauce that would compliment the rub/marinade you are using. For Tex Mex it could be salsa, for a more sweeter marinade maybe an apple cinnamon sauce the options are limitless.
