Hello:

One of my favorite Beatle songs is "Eight Days a
Week."  Why is 'eight days' used instead of seven days?

There are seven days in one week.

Paul McCartney used to have a chauffeur named Alf Bicknell to drive him to John Lennon's house for songwriting sessions.  One day, when Alf was driving Paul over to John's house, Paul asked him if he had been working hard.  Alf replied, "I've been working eight days a week!"  as a joke.  By the time Paul arrived at John's house, he had the idea for a new song.
