Question
when  making beer do you make it in a open crock or like wine with a air lock?

Answer
You'll need an enclosed container with an air lock.  You can have success in any air-tight container, with 5-gallon white buckets or glass carboys being the most common for home brewing.

You need the air lock just like wine because you need to keep the highly sugared solution (called "wort" for beer) from getting contaminated while at the same time allowing the large volume of CO2 from your yeast fermenting the sugars to escape.
