Is it a fact that the ice brewing process further removes some of the enzymes creating hangovers?  

Answer
No that is not true."Ice Brewing"removes more of the haze producing particles,such as tannins,and certain proteins,that will cause a haze,in packaged beer,later.The particles are removed,by subjecting the beer to below 32 F temperatures,just before packaging.This causes the haze causing particles to precipitate out of the beer,prior to packaging
