Question
I was getting ready to bottle beer.  I had the wort in the bucket and the DME was add.  A family emergency came up and the wort foamed like during fermantation.  The question I have is do I add more DME and finish bottling?  What would you suggest doing?

Answer
Yes, the DME you added for bottling has fermented out, and will not help carbonate your bottles.  You should add DME as if you were just starting to bottle.  Add the same amount, unless you already did bottle some, in which case you should reduce the amount -- if you had bottled 1/4 of the beer, add only 3/4 of the DME amount recommended for bottling.
