Hello,

Do you know any good recipes for Bermuda rum cake?  We love the ones sold at the Royal Naval Dockyard and want to try to replicate it at home during these winter months.  Thanks for your help.

I just checked my copy of "What's Cooking in Bermuda" by Betsy Ross (printed by: The Island Press Ltd., Hamilton Bermuda - first edition 1957, my copy reprinted in 1995; Published by: Mrs. Douglas Hunter, "Sky High," Paget, Bermuda) and found no recipe for Bermuda Rum Cake.

NOTE: I bought this book at the airport on one of my Bermuda vacations because it contains a recipe for cassava pie.  If you've never tried cassava pie, made by a loving Bermuda local, you simply haven't lived.  It's one of the most fabulous foods I've ever eaten.  

Why don't you "Google" the recipe?  Or, better yet, try the Surfwax search engine.  Better still, include the Royal Naval Dockyard in your Internet search and contact the bakery directly. Ask for their recipe. You never know, they might give it to you.
