What is the secret to making goog rhubarb wine??

Hi Rich

The secret to any good winemaking is to get good fruit--perfectly balanced and ripe, with good sugar levels and good acidity, and ripe flavors.  After that, the rest is easy---just ferment it and keep everything clean.

For your wine, you should be looking at a total sugar level of around 25 brix, and T/Acidity of something like 0.65
