Question
Why is some apple juice fermented?  In the process of making apple juice, some of the apples are crushed and the resulting pumace held in an aseptic tanks for processing after the apple season is over.  This is called a "fermantation" process.  Why?

Fermentation a process in which yeast consumes the sugar of a liquid and then produces CO2 and ethanol.  Some apple juice is made into apple cider, and that requires the fermentation process.  So if this pomace is used for that, then the fermentation is creating hard apple cider--a delicious drink!

If, on the other hand, someone is storing apple juice in a tank without any yeast, and simply preserving it for future use in the juice business, then it really shouldn't be called fermentation at all.
