Question
Paul, I'm a bartender and I have questions about water bars. They seem to be getting big in trendy areas like New York, LA, ect. Do you know anything about them?
Dear Dave:
I haven't seen quite so much about these. There are a few--but they seem to be a bit of a fad, more than a trend. Until you see two of them open up right next to each other, I don't think you can consider them a really new category in the business....
