Question
If not serving beer, what kind of wine will go with sauerbraten? A riesling or gewürtztraminer? Or, a red wine of some kind?

I think you have this one nailed.  Riesling is probably best--I am not such a big fan of German Gewurzatraminer for this--although a dry Alsatian one would be pretty nice.  You could also try a lighter style pinot noir--that velvety texture does nicely here.
