Question
I am interested in creating a new flavor of liquor, maybe even wine.  Can you recommend any readings/classes/schools or provide any comments on the equiptment and process?

Hi Mike

Many universities offer classes in food technology, and that would be a good place to start.  There are very specialized programs at Cornell, UC Davis, Cal State Fresno, Cal State Sonoma, and Cal Poly San Luis Obispo for winemaking and wine marketing.  On a community college level, Napa College has terrific courses.  

Or you can try to learn on your own.  There are some good books on home winemaking, which would be a good place to start---maybe the simplest is by Phillip Wagner ( no relation!).  You should also check with your local Agricultural Commissioner.  There are now wineries in all 50 states, and the Ag Commissioner often knows the latest info on what is working well, and where.
