1. Dealing with the new testament of the different Bibles; what parts of what books/chapters vary of what bibles?

2. why don't the Jews' think that Jesus was the messiah?

Dear Allen,
Your first questions, as important as it is, is too big for me to answer here. Go to the internet and look up "Bible controversy" or just "King James Bible" and you will find many sites that have charts of those comparisons.
In general though, the controversy is between the KJV and all the rest. A good place to start is Acts 8:37.
As far as you second questions is concerned:
Romans 11:25  For I would not, brethren, that ye should be ignorant of this mystery, lest ye should be wise in your own conceits; THAT BLINDNESS IN PART IS HAPPENED TO ISRAEL, UNTIL THE FULNESS OF THE GENTILES BE COME IN.
