Bible Studies/Teaching Literature of the Bible

Question
Hello, I am an English instructor at a regional state university, and because of my background in the epic and my use of Thomist language theory in some of my work, I have been asked to develop a sophomore-level course in "Literature of the Bible" for the upcoming semester. Though I am a Catholic who is pretty well versed in the Bible, I'm really at a loss as to how to approach the subject for students in a secular environment (though the area is about 65% Catholic.) What literary genres, for instance, might be the most interesting for devising 3-5 doable and memorable units, and could you recommend a Catholic scholar who has organized such a university course? Any suggestions you could give me would be greatly appreciated.

Answer
I am checking with a friend who might have a possible lead.  If so, I'll amend my answer.
I have no personal knowledge of someone to help you.  I have been retired for many years and have lost tract of who is doing what.
I have taught biblical courses that examined and explained literary genre but not from the background of an English department.
Best wishes, Ellen.
