Question
Since Jewish days began at sundown, Jesus died on Friday, was in the tomb on Saturday, and arose early the next day.  So, counting the two parts [Friday and Sunday] and the whole day of Saturday, the total is three days.
Also, the third day in the Old Testament has a symbolic meaning -- the third day is the day of salvation and revelation.

I agree with most exegetes who see the fulfillment of the "sign of Jonah" in the death and resurrection of Jesus.  The usual expression for His time in the tomb is "three days."  The variant formula, three days and three nights," seems to refer to the beginning and the end of the three day period.  Note also that Matthew in addition to the days and nights of 12:39 also uses just the days in 27:63.  So, I think that one can equate the meaning of the two ways of reference.
