Question
Why does a fig tree bear figs but never blooms before bearing the fruit like other fruit trees?

Answer
My understanding of the fig tree blossom is not that it doesn't bloom before the fruit.  But rather that the blossoms are unique in that the floral axis turns inward instead of outward as most other fruit trees do.   It is the small internal blossoms that we consider the sweet fruit.

There are other strange "fruit" in God's creation.  I also seem to recall that the cashew, which we call a nut, is a part of a flowering blossom.
