 In Gen. 1:26,28 it says that on the sixth day
God created men and women.
 In chapter 2 it says that God planted the garden of Eden, then made Adam out of dirt, and then made Eve out of Adam's rib.
 This leads me to believe that Adam was not the first man, and Eve not the first woman.
  What do you think?

Actually, the statements in chapter two referring to the creation of Adam and Eve are not an indication that other men and women were created previously.

Chapter one is an overview of the events and timeline of the six days of creation. In chapter two, the writer begins a narrative and begins to go into more detail about the creation of Adam and Eve and their experience in the Garden of Eden. This is not a statement of subsequent events, but an elaboration of the event already referred to in chapter one.

Answer
God created the first man and woman, Adam and Eve, who procreated and grew into a large number of men and women.

One has to believe that Adam and Eve were the first man and woman, the parents of the human race. Paul talks about the fact that the human race fell into sin when Adam and Eve fell, resulting in a sin nature being passed on to every living human being. If there were other men and women, this destroys the teaching that the race was contained in Adam. (See Romans 5, I Corinthians 15.)
