What can you tell me about the social stratification of the New Testament Times?

Dear Elaine,
   An expert in the field of Roman Empire history might help you better, but I've included a few thoughts that might help.  
   If you mean by social stratification, the different values society placed on different classes, such as the slaves, or women, or children, then you'll find examples in the New Testament giving equal value to all (Lydia, Dorcas, Priscilla, Onesimus, etc.), as well as direct commands to consider all humans of equal value.  Acts 10:34-35, Galatians 3:28, Matthew 19:14, etc.
