Question
Iodine changes the color of starch but not of glucose while both are the forms of carbohydrates..why is that so?

Answer
 Hi Pooja: It depends uon the structure of the molecules.  Iodine reacts with a component of a starch moleculs called Amylose.  It does not react with other components of starch or with sugars which do not contain amylose.  We sometimes cannot answer as to why the Laws of chemistry lead to certain results: we just know that they do.  In this case the iodine alters the amylose molecule so that it reflects the blue wave lengths of light
