Question
why will amylase speed up the breakdown of starch but not cellulose

Answer
Enzymes are very specific as to which substrat they work upon.  It has to do with the chemical structure of that substrat and it becomes mechanical.  Starch and cellulose are different carbohydrates.  Amylase is an enzyme found in animals nd cellulose is not.  The counterpart to cellulose in animals is glycogen.
