Question
I've been having trouble with rpm's and power.  At idle can rev it up to 5000plus rpm but under load it seems like  its losing a cylinder can only get 2500-3000 rpm.  Sometimes it will kick in and away I go.  Took it to a local shop, rebuilt carbs, new plugs and harness under stator.  They gave up.  Also it seems to run hot.

Steve, NEVER, EVER rev the engine up in neutral, you can only damage it.
First do a compression test of each cylinder. If it is getting hot it can make it run lean and score a cylinder or vaporize the fuel before it can ignite properly causing erratic behavior.
It sounds like your shop is just guessing. It is only a mechanical machine and can be repaired in most cases. Take it to a good reliable shop and have them check it out.
