QuestionI have been bowling for 19 years, and I want to learn how to properly fit, drill, and open my own shop. There is one shop between 4 houses with in a 100 mile radius. How would I start off? Is there a school?

Absolutely.
As an International Bowling Pro Shop and Instructors Association (IBPSIA) certified pro shop operator and USBC Certified Coach, I'd strongly recommend you take advantage of the education available to you.
Todays equipment is significantly more sophisticated than when I bought my first store 18 years ago. Fitting techniques have advanced almost as much.
Start with the website: ibpsia.com. Look for the Hands On Training (HOTs) Program. The next two will be at: Gran Prix Bowling Supply in St. Louis, MO. March 8-12 and at Karen Pullman’s Training Center, Sandy, Utah, April 15-18 hosted by Complete Bowling Services.
