Question
Bob, I am making nutrolls(the individual ones) and would like to know if I can prepare the mix,fill and shape the rolls, and then freeze them on a cookie sheet,then package them to take out and bake right before Xmas? Will freezing kill the yeast action, or by thawing them out, will the yeast then be activated and let them rise and then bake.  Any help will be appreciated.  Thanks

darlene,as lons as they are in a tightly sealed container,they will keep and the yeast will come right back to life,just don't make them too far in advance,the do degrade eventually,no more that 10 days for optimum quality,vacume packing helps greatly.good luck. bob connolly,www.millsbakery.com
