Bread & Pastries/Puff pastry

Question
Can you refreeze puff pastry once it has been thawed? I had to make desserts for a large group of people and had 1kg too much puff pastry thawed. It's in the fridge now, but 1kg is an awful lot of pastry. Can I roll it out, cut it into 4 equal pieces and freeze them again?

If not, what can I do with so much pastry?

Answer
Hi Toni,
Yes you can refreeze puff dough once it has thawed, but once it has thawed it will lose a little bit of it's puff power when you use it again.  I would recommend refreezing as soon as possible.  You can also make up more of whatever you would like and freeze it that way.  Then when you need it take it out of the freezer, thaw it in the fridge and bake as directed.  Hope this helps, happy baking.

Have a great day,
