Subject: fondant on fruit cake

Question
Hi I have made marshmallow fondant and I plan on covering a fruit cake with it. is it necessary to cover it with marzipan first? or will butter cream be ok? Also I have to cover 3 loaf pan sz cakes but just the tops what should I put under the fondant for that. Thanks

meghan, i generally use buttercream and put the cake in the freezer to harden the bc,it always works for me but i use regular fondant,not marshmellow,i have never heard of that so be carefull if it's hot where you live,in n.j. it's been in the 90's,always a challenge working with fondant,do it in an airconditioned room if you can.good luck bob connolly,www.millsbakery.com
