Bread & Pastries/Banana Bread is too done on bottom

Question
I have tried reducing the temperature and cooking a few minutes longer but my bread still has a darker appearance than the top. The top seems to taste better like banana bread should. I use a normal loaf pan in the middle of my oven. Can you help so I can enjoy my bread? Thank You

Do you use a non-stick pan? Those, and any with a dark interior will give you a darker crust. If not, perhaps your oven is hotter on the bottom than on the top. Try placing the loaf pan on an inverted rimmed cookie sheet or pie tin, or place a piece of aluminum foil - shiny side down - under the pan. Let me know if either of those remedies help.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
