Question
Every time I make cinnamon swirl bread I get gaps of holes where the sugar and cinn are and the bread.  Its splits there and leaves a hole.  Any ideas how to prevent this?

That is hard to prevent. The only thing I can suggest is to make sure you roll the dough tightly. I sort of press the roll in a bit as I go, if I'm describing it right, not squishing it, just making sure each layer is tight. It still opens up sometimes.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
