Question
Hello:  Everytime I make an apple pie or pumpkin pie the bottom crust is either not cooked or so wet that it tastes not cooked.  I have tried brushing egg white on the bottom, and placing my glass pie late on a metal cookie sheet, but that does not help. How can I fix this?  I appreciate your input.

There's two things you can try. First, next time, try moving your oven rack to the lowest position and bake the pie there. If that still doesn't work, try par-baking the crust. You will need to line the pan with parchment or foil and then fill it with pie weights or dry beans. Bake it for 10-12 minutes then let it cool before putting the filling in.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
