Bread & Pastries/baking temp.

Question
I am making Christmas stollen and want to be certain it's done when removed from the oven.  What temperature should I bake it too?  Thanks

Answer
Marilyn:
Do you have a recipe? It should state both the temp and the baking time. I checked my recipe, and it calls for baking 20-25 minutes at 375, but the time would depend on the size of the loaf, as well as how dense the dough.

I think I just go by looks and smell (I always rely on my nose to tell me when something is almost done, that is when you begin to smell it) - it should be nice and brown on top.

Expertise

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
