I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience
I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.

Question
Using Puff Pastry & Filling
I rolled & cut into 12 rolls & placed into Paper Cups.
Next Recipes says (PROOF Percent & eggwash) & then Bake
What does that mean ???????????

Frank-
I'm not sure if you condensed the instructions or if there was a typo in your recipe - proof percent?

Proofing refers to letting the pastry rise, which isn't usually needed with puff pastry, so I'm not clear on that myself. Egg wash is either a whole egg or an egg yolk, mixed with a little water and brushed onto the pastry. It is not necessary, it is just there for looks. It will give the pastry a nice glaze, but also makes it brown a little more.
