Bread & Pastries/Gas Oven Baking

Question
Hi Elyse, I just baked an orange pound cake in a gas oven (GLEM) for about 50 mins on the middle shelf . This oven is really basic, it only has grill, 4 cooker hobs and a gas oven. AFter 35 mins, the cake still was not browning at the top - i had to grill it for 2 mins to get the browning. Am I doing it wrong? Or does a gas over take longer than an electric one. I am more used to an electric oven.

Appreciate your advice!

Answer
Sui Yin:

I suspect that the oven temperature is off a bit. I suggest you get an oven thermometer and test it. A gas oven should take the same amount of time as an electric at the same temperature, though the electric oven is a little more even in it's temperature - that is less difference between various spots in the oven.

Expertise

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
