Question
why do my rolls (almost any yeast rolls) come out with concrete crusts?

Answer
Christopher-

Possibly you're overbaking them. Are you covering them during their final rise? This keeps the outside from drying up too much.

You could baste the rolls with milk or cream before baking, that will give you a softer crust. Also, covering them with a towel while they are cooling will soften the crusts.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
