Question
We are replacing our oven and are trying to decide if we should pick an electric oven or a gas oven. It will be used frequently. We were curious as to which type would be best for baking pastries and breads.

I think it depends on the kinds of things you bake. Electric ovens are said to heat more evenly, but I find that my gas oven is actually more even than my old electric one was.

One benefit of a gas oven for baking is that you can use the floor of the oven for certain types of bread, such as pita and flat breads. I used to keep a pizza stone on the base of my oven, until it broke. I would bake flat breads and pizza directly on the stone.

Another consideration might be cost. Natural gas is less expensive in most areas.

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
