Hey! Thanks for the help.
Okay simple question =]
If im going to make a regular vanilla cake, in a glass 9 by 11 pan, how do I put the mix inside, so that when the cake rises, it doesnt get that large bump at the top?
Basically, how do I get the cake to rise evenly? =] Thanks!

Here's a baker's trick. Take an old terrycloth towel or dishtowel and cut it into a strip about 1" wide and long enough to go around the outside of the pan. You may have to piece it. Wet the strip and pin it in place in the upper half of the pan. also, decrease your oven temperature by 25 degrees when using glass baking pans.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
