Experience
I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.

Question
Why does my pumpkin bread sink in the middle after if is finished baking?  Not enough flour??????

Jolene:
It could need more flour. The pumpkin has a lot of moisture, so that could be making the bread sink. Instead of adding flour, you could also drain the pumpkin on towels for a while before baking the bread. Is the bread done in the middle after it cools? If not, you may need to bake 5 minutes longer, or increase the oven temperature by 25 degrees.
