I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience
I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.

Question
I tried my hand at doughnuts last night, I followed the recipe to a tea. My oil was 375 and everytime I put dough in to fry is fried apart...so that my doughnuts were particles after about 1 minute in the oil...

Sounds like your dough was too wet. Where did you get the recipe? All the recipes I looked had 1 to 1 1/2 cups liquid to 4 cups flour, plus butter and eggs. Did yours have a higher proportion of liquid?

The only other thing I can think of is that your thermometer was off and the oil wasn't hot enough, but that would probably just leave you with heavy, oily doughnuts.
